Tangy Pork Marinade

This was really great.  I went with 1.5 lbs of thin cut boneless pork chops. Brought two to work each day with a bunch of steamed broccoli with lemon juice.

  • 1-2 lbs pork
  • 3 cloves garlic (minced)
  • 1/2 cup olive oil
  • 1/4 cup balsamic vinegar
  • 2 scallions (chopped)
  • 1.5″ ginger root (grated)

Combine all ingredients and coat pork, well. Marinate for at least one hour and grill it up!  I soaked mine overnight and it was great. Pork was tender and full of flavor. Looking forward to trying it with other meats.

Paleo marinade and mayo…my new favorite.

mayoI grilled some chicken breasts the other night on my beloved grill pan using the following lemon & herb marinade, which I use quite often. Then I just steam a couple heads of broccoli and I have my lunches for the week.

Lemon Herb Marinade

  • Juice of one lemon
  • 1/2 tsp sea salt
  • 1/4 tsp pepper, rosemary & thyme
  • 4 cloves minced garlic
  • 1 Tbl olive oil
  • 1 lb chicken breast

Marinate for at least 1/2 hr, then grill.

*Well, today I was craving some mayo. Some cut up chicken breast over a bed of greens, mixed with some good ol’ mayo. So, I whipped this recipe up and I LOVE it!

Paleo Mayo

I used a hand mixer for this to control the emulsion.

  • 1 lg egg
  • 1/2 tsp sea salt
  • 1 Tbl apple cider vinegar
  • 1 cup ex light tasting olive oil

Blend first three ingredients until frothy, then slowly trickle in the olive oil. Add a couple drops at first, then a slow stream. The mayo will thicken up a little . Add pepper, dill, cayenne, etc to taste. I added just a little pepper and it’s SO yummy!!!!
